Mario García Jarquín

Mario García Jarquin was born in Logoche, Miahuatlán in 2001 and was initiated into the world of mezcal as a child, observing how his father Celso García worked and helping him in whatever way he could. At 18 years old, Mario made his first batch with Arroqueño, Madrecuixe and Bicuixe piñas he purchased from a local grower. Mario credits his father Celso and his mother Filipa with teaching him how to work in the palenque along with his uncles and other elders from the community of Logoche. His older sisters Gloria and Guadalupe also make mezcal and lend a hand in his and his family’s productions.

Soil type: colorada, roja, and cascajo

Oven: 7-ton capacity, conical, earthen oven

Mashing: Machete, axe, and shredder

Fermentation: 5 Montezuma cypress sabino wood tanks. 1000 - 1200 liter capacity.

Distillation: Mario double distills using two different copper pot stills, one with a 250-liter capacity, and the other, slightly larger at 300 liters.
